Looking for a great place to go for a “date” night? A place where you can dress up, your loved one can put on heels and you can be treated like kings?
Carolina, located at the St. Regis Punta Mita Hotel, is a three-diamond award-winning restaurant. It is, without a doubt, the most elegant space we have here in Punta Mita.
Like everything else at the St. Regis, great attention is given to the design and the atmosphere. I am particularly drawn to the classic style of the place: white starched tablecloths, heavy silver cutlery, and crystal.
Delectable Dinners – St. Regis Punta Mita Style
Carolina showcases the very best of contemporary Mexican cuisine. This restaurant, gastronomically speaking, is neither stuffy nor old fashioned.
Chef Jose Meza Arroyave offers up classic Mexican street food or traditional staples – putting a fresh, modern, utterly delicious twist on everything. Dishes that could seem commonplace are given a thorough and imaginative overhaul and come out with an amazing depth of flavours.
Delicious beef tacos, pozole verde ceviche, suckling pig, duck mole – all are served in good-sized portions, are beautifully presented and very well-executed.
The desserts are made with exotic local fruits and grains. My favourite is a silky-smooth chocolate ice cream surrounded by an icy, crunchy granite.
The menu is in sync with the seasons – many of its items change daily or weekly to take advantage of the freshest ingredients.
Perfect Pairings for your Palate
The wine list is always a good read at Carolina with some interesting Mexican choices as well as a good selection of the best wines from around the world. The last time we dined at Carolina’s, we enjoyed a wonderful Sicilian red which paired perfectly with the meat dishes and was a happy reminder of my trip last year.
The inviting bar provides a perfect setting for cocktails. Larger parties might be interested in booking the lovely private dining room.
Apart from being situated in the fabulous St. Regis Punta Mita Resort, another upside to this attractive restaurant is the romantic outdoor terrace. In the cooler months, you can dine al fresco and enjoy stunning sunsets and remarkable ocean vistas.
After a day in the sun, you can enjoy the full AC. It’s not easy to find fully air-conditioned restaurants in Punta Mita, but at Carolina you can keep your cool. (Pun intended)
